Aside from few amazing episodes like Dark Dr. Strange, Zombie one and Captain Carter one, series is the definition of mediocre.
I think season 2 was far weaker than the first and yes it's good to have some funny episodes here and there but this series skews way too much towards kid friendly and comedic stuff and misses whole point and spirit of What if comics, where majority of stories had a pretty dark and bad endings not "they lived happily ever after" type of endings, that's what made What if comics unique from regular comics, this risk aversion makes this tv series incredibly boring and even less memorable than any what if comic. I read there was some plans for Spider-man meets Children of Men episode and that would have been amazing but it was considered too dark...
1602 Episode was straight up mockery of brilliant Neil Gaiman story that was turned from creative and layered tale into some silly Saturday morning Disney channel special, so I'm not sad that season 3 will be final but I gotta give them huge respect for having Kahhori episode be fully subtitled, this is how it always should be when it comes to scenes where there's no logical sense for characters to speak modern english.

That seems likely. I've gotten the impression that Disney has decided that it's not profitable to produce content exclusively for Disney+ so once they release everything that's complete (or currently near the end of development), that will probably be it for original content for their streaming channel.... or at the very least it will be released far less often. It will be interesting to see their strategy as they fully integrate D+ and Hulu. This is disappointing to me because I feel like if I'm paying a monthly subscription fee that they should have at least one new episode of either a Marvel or Star Wars show every single week of the year. However they seem to have a problem with maintaining quality as they increase quantity. I don't really care about anything else Disney related outside of those two properties. Now that Echo and What If are over and there seems to be nothing on the immediate horizon, I think it's time for me to dump my subscription for a bit. I've had it every month since it was first introduced, but I just don't see any reason to pay when there's no new content coming soon and I never re-watch anything a 2nd time. I'll probably re-subscribe when X-Men '97 hits.

I just finished season 2 and overall I enjoyed it and thought it was better than season 1. From what I have heard though season 3 will be the final season.

I felt like this season was stronger, overall, than the last season! Again, I liked the deep cut references like the Freak. I stated I don't want anymore What if figures, but man those 1602 designs were pretty awesome!

I was really disappointed that we never got to the founding of SHIELD in that Agent Carter series.
